3. Air Lab, Cabramatta
If you’re after fluffy pancakes, you don’t need to look further than Air Lab. The Brothers Cafe is a small hidden gem and a personal favourite of mine. Serving a variety of divine soufflé pancakes, the menu consists of everything from Thai tea pancakes with Thai tea cream sauce, white Timtam crumble, seasonal fruit and vanilla ice cream to Tiramisu pancakes for chocolate and coffee lovers. Their tagline says that they try to make everyone’s experience ‘unforgettable’, and they certainly live up to the promise.

The ricotta pancakes at Bills caused quite a stir when they first made an appearance on the brunch scene. And they continue to set the standards in Australia especially when it comes to their pancake dishes.
