Sydney is a city that takes brunch (especially boozy bottomless brunches) very seriously and there’s one item that absolutely must feature on the menu: pancakes. From your humble breakfast stack to super over-the-top creations, there is no dearth of options if you’re looking to get your hands on these thick slabs of delicious buttery goodness.
Whether you like yours drowning in maple syrup or with a big helping of fruit and bacon, these Sydney pancake spots are a must.
1. Gram Cafe & Pancakes
Gram’s three-tiered, souffle-style Japanese pancakes are some of the most sought-after in the city and rightfully so. Customers can choose from eight sublime varieties including mochi pancakes, French toast, and the new savoury favourite, the Benedict. Gram has recently opened a new branch at The Galeries but be ready to wait your turn to get your hands on these bad boys because the cafe is almost always packed.

2. Pancakes on the Rocks
Pancakes on the Rocks is an old fixture on the Sydney foodie scene and continues to serve up their world-famous buttermilk pancakes, both sweet and savoury depending on the mood. Even better — they’re open 24/7 so you know where to head to on your next night out.

This little cafe in Haymarket is a haven for those craving some Indonesian comfort food. But one of its specialities that you absolutely must try is the Kopi Pancakes served with ice cream, peanut butter, chocolate drizzle and palm sugar syrup dressing. And it won’t hurt your Instagram feed either.

4. Bay Vista
This bar and cafe knows how to serve up a mean stack. On the menu you can find everything from pancakes to waffles and crepes in every flavour you desire. Dig into some blueberry ricotta pancakes or try the New York cheesecake — whatever you pick, you’ll leave feeling content and smiling.

Speedo’s serves up some of not just Sydney, but the world’s most Instagrammable dishes. Their caramelised banana and chia pancakes are a true sight to behold and they’re vegan. Just look at them. Topped with seasonal berries and fresh fruit, a pistachio crumble and drenched in maple syrup, this is sweetness overload done right.

Lumiere offers an excellent brekky experience with the chance to sit back and take in the Surry Hills life. If you’re looking for their famed hotcakes, you won’t be disappointed because these hot little things are topped with a mixed berry compote, mascarpone and pure Canadian maple syrup. We’d call them perfect, but we think we need to try them a few more times just to be sure.

7. The Brothers Cafe
The Brothers Cafe is a small hidden gem and a personal favourite of mine. Serving a variety of divine soufflĂ© pancakes, the menu consists of everything from Thai tea pancake with Thai tea cream sauce, white Timtam crumble, seasonal fruit and vanilla ice-cream to Tiramisu pancake for chocolate and coffee lovers. Their tagline says that they try to make everyone’s experience ‘unforgettable’, and that they certainly do.

For the uninitiated, the ricotta pancakes at Bills caused quite a stir when they first made an appearance on the brunch scene. And they continue to set the standards in Australia especially when it comes to their pancake dishes. If you’re a brunch enthusiast and haven’t tried their selection of pancakes yet, you’re seriously missing out.
