Sydney is enjoying quite a moment when it comes to big-ticket restaurant residencies. Hot on the heels of Mirazur wrapping up its residency at The Gantry and Gordon Ramsay announcing a three-day pop-up at Aria, Eleven Madison Park has now announced that it will be travelling Down Under. Named the best restaurant in the world in 2017, the New York City mainstay is coming to Sydney as part of the inaugural Vivid Food program. Spearheaded by chef Daniel Humm, the famed restaurant will take over Aria for two weeks.

Back in 2017, Daniel Humm ditched meat and converted the three-Michelin-starred spot into a fully vegan menu causing quite a stir in the hospitality industry. But it had little impact on his culinary genius. Now he’s merging the NYC institution with a Sydney stalwart in an exclusive tailor-made experience for Sydney gourmands.
Humm and his team are set to develop bespoke tasting menus during the residency which will include a nine-course for dinner ($550 per person) and a shorter tasting menu for lunch ($395) with drinks pairings available.
“We couldn’t be more thrilled to participate in Vivid Sydney and bring Eleven Madison Park to the iconic Aria Restaurant,” Humm said in a statement.
“This year’s theme of ‘Naturally’ closely resonates with our core values and journey as a restaurant. We’re excited to delve into New South Wales’ fresh and local ingredients to bring a creative, beautiful, and delicious menu to life with Chef Matt and his team.”
The dining experience set against the backdrop of Vivid Sydney’s spectacular light shows promises to be one-of-a-kind. Tickets go on sale from Friday, April 28. Head here to book them.
