The Maybe Sammy crew is on a roll. After announcing their own cocktail festival in April, the team has now opened the doors to a vibrant new bar housed within The Rose Hotel. Bringing the colour and vibe of Mexican bars to town, El Primo Sanchez is all about fiestas, tequilas and good times, in signature Maybe Sammy style. The bar is a collaboration between The Maybe Group and Public Hospitality and pays tribute to Mexico’s colourful neighbourhood bars.
“We wanted to develop a venue that nestled nicely into the existing framework of a 1940s pub. The idea of creating a Mexican bar that is a throwback to the colourful local bars that are found throughout Mexico made sense,” The Maybe Group co-owner Stefano Catino said.

Grab a drink and head to the cheery bar and lounge area or hit the dance floor under a bunch of glittery disco balls. Also at the venue is a DJ booth and a mini two-person karaoke booth with a “Press for Tequila” button which will keep the drinks coming as you croon to your favourite tunes.
The food menu includes al pastor tacos made with 12-hour achiote marinated pork belly cooked over coal, snapper ceviche, chorizo con papas, charred broccolini and more. With the Maybe Sammy team at the helm, drinks are bound to be a huge draw. Expect premium tequila and agave spirit with highballs served in clay jugs. Highlights include the Primo Margarita served in a bespoke margarita glass, the Gimlet El Maiz which features a cordial made from toasted leftover tortillas and frozen slushies to beat the heat. Mexican beers on tap and Spanish-inspired wines will also feature on the menu.
The interiors are equally vibrant with bold oranges and royal blues adorning the walls, LED lights keeping things groovy and a small number of outdoor seating spots available for chill sundowners.
El Primo Sanchez is the fifth venue to open from The Maybe Group and joins popular venues Maybe Frank, Maybe Sammy, Dean & Nancy on 22 and Sammy Junior. It will be open four nights a week, from 4.30pm until late. Keep your eyes on their website for updates.
