With Mardi Gras festivities around the corner, the city is ready to be drenched in colour. Jumping on the bandwagon is Cuckoo Callay with a special, limited-edition Mardi Gras menu to add a bit of spice and colour to your everyday grub. The sunlit cafe offering street views and seriously good coffee is adding a delightful twist to all their menu staples including their French Toast and Shrimp Po’Boy.

Bringing a whole month of Mardi Gras madness to their café’s in Surry Hills and Newtown, their oh so vibrant menu will transport you straight to the streets of New Orleans. I mean, just take a look for yourself…
Wondering what’s on the menu? Let’s start with the quick and easy French toast which looks simple enough but we all know that looks can be deceiving. Their reimagined rainbow French toast named Je M’Appelle Kaya, is made up of crunchy nut coated ube halaya French toast, with kaya and ube halaya jam, lemon curd, coconut and lime crumble and topped with rainbow meringue to give your sweet tooth a serious tingle.
More inclined towards the savoury stuff? Get your hands on the Shrimp Po’Boy — an authentic New Orleans style sandwich on a hoagie roll that comes stuffed with crispy polenta fried shrimp, cheese, red onion, horseradish remoulade, pickles, lettuce, and a side of salt and vinegar chips, paying homage to the parade’s origins in New Orleans.
As for drinks, grab a watermelon and cucumber sangria jug to beat the heat or share a fruity concoction of sauvignon blanc, watermelon, cucumber, lime, honey, and fresh mint. You can’t go wrong.
The attention to detail is commendable. On display are rainbow accessories, flags and limited edition rainbow coffee cups. And you can contribute to a great cause by dining here. $2 from each new menu item sold will be donated to ACON, an organisation that supports LGBTQIA+ people across NSW.
