Raclette is also a meal, which is why the melted cheese will be scraped straight off the wheel and served onto boiled potatoes, Jamon serrano, confit oyster mushrooms, heirloom tomatoes, tiny pickles and a handful of rocket for a healthy dose of greens. A vegetarian option is also available which includes juicy Andulucian Gordal olives.
