Autumn is setting in, and it only seems fitting to indulge in hearty, comforting dishes that complement the season. Thankfully, the Maybe Sammy team is pulling all the stops on that front. As part of the Maybe Cocktail Festival, the cocktail maestros are bringing an exclusive event to town. Dubbed Francesca, the pop-up is all about a delightful combination of pillowy gnocchi and expertly crafted cocktails, all set in an Italian-inspired setting. It’s only in town this April for one week, so don’t miss out. Here’s everything you need to know.
Francesca, Maybe Sammy

Drawing inspiration from across the sea, Francesca’s menu is crafted by Rosy Scatigna, Development Chef at Accor, and promises an authentic taste of Italy. Menu highlights include standout dishes such as warm rosetta bread with garlic and parmesan butter, antipasti served in a nonna’s jar, a selection of salumi and cheeses, savoury fried doughnuts, and much more.
The bulk of the menu at Francesca is the gnocchi, with four variations to look forward to. Guests can enjoy: Bianco, a creamy cheesy delight; Rosso, featuring Francesca’s signature slow-simmered tomato sugo; Verdone, a fresh green pesto; and Tricolore, which offers a tasting of Bianco, Rosso, and Verdone in one dish.
And what’s a Maybe Sammy pop-up without cocktails? Enjoy creative spins on classics such as the Bloody Maria, Garibaldi, Bellini, Breakfast Martini, and Limonata Spritz. For a quick lunch on the go, grab a serving of gnocchi paired with a soft drink, wine, or beer for just $18.
Francesca will take over Georgie Wine Bar in the CBD from Monday, April 7 to Saturday, April 12 from 1200pm to 2:30pm and in the evening from 5pm to 10pm. Make a booking here.
