The iconic institution has been a local staple since 1834, but a visit today reveals a new and improved look following three years of extensive redevelopment. Hay St Market is now open, as a tribute to the historic Paddy’s Markets site, with over 48 stalls and more than 25 global cuisines. Spanning more than 3,000 square metres, the market features a Mark Olive and Luke Nguyen outpost, exciting street food offerings, daily essentials, shopping, and much more. Open seven days a week from morning until late, Hay St Market is poised to become a go-to foodie destination for both locals and visitors. Whether you’re after delicious street food, local artisanal products, fresh flowers, or eclectic homewares, you can find it all in this epic new space.
Highlights of Hay St Market include: 48+ traders across food, beverage, and retail, 25 unique cuisines from around the globe, including concepts launched by chefs and restaurateurs Luke Nguyen and Australian Indigenous Chef Mark Olive, and two vibrant bars so you don’t have to wait too long to quench your thirst. Plus, it’s fully licensed, so you can enjoy a refreshing beer or cocktail with your meal. Shoppers will also find house-roasted coffee, a salumeria, a greengrocer, and a florist on-site.
Food stalls range from familiar favourites to newbies, including Pho Chu Lap, Traders Bar, Biaggio Coffee & Cannoli, Yuki Izakaya Bar, El Mercado Spanish Deli, Burger Box, La Charcuteria, Love Me Tender, Curry House, Gozle-Me, Paolo Panino, and many more.
Celebrity chef Luke Nguyen will bring his expertise to several stalls at Hay St Market, including Pho Chu Lap, where he will dish out his signature 24-hour pho. Meanwhile, acclaimed chef Mark Olive will bring Indigenous Australian cuisine to his Little Midden stall, bringing the inventive flavours of his Opera House restaurant to a vibrant new space.
