The bun is the least best bit of a burger, existing only to strategically hold all the good stuff.
But not anymore. (And it’s not thanks to KFC’s The Double.)
In fact, it’s thanks to a year of research and testing by the team at Bunbar, Manly’s newest eatery, that ultimately led to the discovery of the perfect balance of ingredients needed to make falafel buns. (Featured image: @bunbar_burgers)
That’s right. Falafel, instead of substituting the meat patty, is now substituting the bun.
So then, what’s stacked between the two falafel buns?
Hummus, pickles, a tahini drizzle, cucumber, tomato, tabouli, red cabbage and lettuce. And it looks …

… good!
But the Falafel-burg isn’t the only burger on the menu that’s had a makeover. It’s actually only one of four with more on the way.
Thanks to the curiosity of the Bunbar baker, the Soft AF bun was born. Rather than steam the traditional bao bun mixture that was made, it was thrown into the oven to see what would happen. The result? A crispy on the outside bun with the soft-pillowy texture of bao on the inside.
Up third is the Grilled Rice bun, made with help from some Japanese chefs, which is exactly as its name suggests. And last but not least, is the Lettuce bun – think san choy bow and you’re on the right track.
BUT WHAT ABOUT THE FILLINGS?!
For the Soft AF, Grilled Rice and Lettuce bun, patrons can choose from grilled beef, 20-hour smoked beef brisket, grilled chicken, and southern fried chicken. And since this is Manly, the menu also caters to vegan and vegetarian diets with plant-based chicken wraps. And obviously, they’ve got the Falafel-berg too.
