Just as the city will be transformed this August for Vivid Sydney, 6Head restaurant in Circular Quay will also be transformed by its own projection mapping spectacle drenching its waterside venue, which has views of the Sydney Opera House and the Harbour Bridge, in colour and light.
Sitting down to a delectable four-course dinner with drinks, diners will be enveloped by a kaleidoscopic and dreamlike show that, like Vivid Sydney, will convert the familiar into the extraordinary for a feast unlike any other.
While A Journey Through Time does elevate your meal beyond the ingredients on the plate by turning the table and your surroundings into an immersive, multisensorial and narrative-driven encounter, the feast itself is of equally epic proportion.
To begin, guests on this time-travelling adventure will begin their journey with a glass of Chandon Blanc De Blanc Brut on arrival before opening their appetite with the loaf of the day served with beef dripping butter.
Moving on, they will then savour their entrée of Kingfish Ceviche or Lamb Tartare before tucking into their selected main, either a 200g Tender Valley fillet grilled to their liking, a pan-fried Ocean Trout rib rack with prawn bisque reduction or a chargrilled butterflied chicken served with a tasty veal sauce. Deciding what you’ll eat won’t be easy.
As always, save room for dessert because the gastronomic journey nears its completion with a carrot cake soaked in spice syrup and served with poached pear, maple mascarpone, crispy puffed rice and housemade dulce de leche.
Or, you could choose the layered Wagyu Fat Delice that features layers of chocolate and nut brownie, peanut butter caramel, chocolate mousse, Wagyu fat and chocolate ganache, dehydrated peanut butter served coconut ice-cream. Again, the choice is yours.
To complement the sweetness, guests will be served a glass of Margan Botrytis Semillon dessert wine as well as be tempted with a Glenmorangie Whisky Experience at no extra cost. This is on top of the Peronis, Terrazas Reserva Malbec and Cape Mentelle wines they will be sipping on throughout the evening.
The man behind these mouth-watering creations is South African Sean Hall. The award-winning executive chef at 6Head began his culinary journey in the UK’s Lake District at Langdale Estate before sharpening his knives as part of the Jamie Oliver Group and moving to Sydney.
In collaboration with Sixth Sense Agency, past, present and future will converge to spark conversation and tantalise taste buds at 6Head with this time-travelling 135-minute experience. Gastronomy and technology collide twice each night from Wednesday to Sunday between August 6-15.
