The Wilton at Bingara Gorge is officially open, with the new hospitality venue welcoming its first guests today Friday, May 15 in Sydney’s fast-growing south-west.
Set against the rolling greens of Bingara Gorge Golf Course, the Feros Group-led development marks a major new addition to Wollondilly Shire’s dining and entertainment scene—positioning itself as both a local hangout and a destination worth the drive from Greater Sydney.
Backed by Metro Property Development as part of the wider $50 million Bingara Gorge Country Club precinct, the venue has been designed as an all-in-one space that blends casual dining, live entertainment and family-friendly experiences in a pavilion-style setting that leans into its natural surrounds.
A Space Made For Everyone
Inside, the scale is immediately clear. The Wilton can host up to 1,000 guests, with a layout that caters to just about every kind of visit. There is a spacious bistro and lounge serving modern pub classics, a dedicated sports bar—Steve’s—fitted with large-format screens, and an expansive beer garden that spills out towards the fairways.
“We’re incredibly proud to officially open The Wilton and welcome the community through the doors,” said Feros Group Director Chris Feros. “Our vision has always been to create a place that feels like the heart of the region—somewhere people can come together for everything from family dinners to big celebrations.”
Families are firmly part of the picture, too. A large outdoor playground gives kids room to roam, while adults settle in for long lunches or sunset drinks overlooking the course.

Food is central to that ambition. The menu leans into comfort-driven favourites with a contemporary edge, underpinned by seasonal produce and a focus on share-style dining. Group Culinary Director Jamie Gannon said the offering is designed to reflect both the setting and the social nature of the space.
“From our dry-aged beef program to produce grown locally, every dish is about bringing people together over great food in a relaxed, beautiful environment,” he said.
According to Feros Group CEO Simon Johnston, the venue fills a long-standing gap in the region. “The Wilton Bingara Gorge fills a significant gap in Wollondilly Shire,” he said. “As the area continues to grow, we see this becoming a genuine community cornerstone—not just for locals, but for surrounding suburbs like Campbelltown, Camden and beyond.”
Building A New Destination For Wollondilly
The opening also signals the first stage of a broader hospitality vision for Bingara Gorge. Future plans for the site include boutique accommodation, conferencing facilities and premium wedding spaces—moves that would further cement the precinct as a major lifestyle destination in South West Sydney.
Beyond the day-to-day dining offer, The Wilton is also gearing up a steady calendar of programming, with live music locked in for Friday and Saturday nights, plus family-focused events on Sundays.
