The Wilton Bingara Gorge, set to open next month overlooking the lush fairways of Bingara Gorge Golf Course, marks a fresh chapter in Wollondilly Shire’s growing hospitality scene.
Consequently, Metro Property Development’s $50 million Bingara Gorge Country Club anchors a 7,280 m² contemporary leisure precinct adjacent to the golf course.
Designed by the award‑winning Feros Group—the team behind local favourites like The Prince Hotel in Kirrawee and Cronulla’s Parc Pavilion—the sprawling venue aims to be a one‑stop spot for dining, drinks and community connection.
A Space Made For Everyone

Accordingly, the team built The Wilton to accommodate up to 1,000 guests, designing it with every kind of gathering in mind.
Inside the venue, you’ll find a welcoming family bistro and bar serving comfort‑driven classics with a modern touch, a dedicated sports bar and a relaxed beer garden spilling out onto an open terrace that looks straight over the golf green.
A large outdoor play area keeps the little ones entertained, while the grown‑ups can settle in for long lunches or sunset drinks. “The Wilton Bingara Gorge fills a significant gap in Wollondilly Shire,” said Simon Johnston, CEO of Feros Group.
“It’s a place for the community to gather. As the area experiences rapid growth, we designed The Wilton to become a community cornerstone for locals and a destination for surrounding suburbs, including Campbelltown, Camden, Wollongong, and greater Sydney.”
This ambitious build will create over 100 construction jobs now and more than 100 permanent roles once open, fuelling South West Sydney’s world-class destination estate.
Comfort Food, Done The Feros Way

Moreover, to match the scale of the venue, the menu strikes a balance between nostalgic country cooking and contemporary flavour. Fresh, seasonal produce—much of it sourced locally—underpins a range of dishes designed for sharing.
“Our aim is to create a dining experience that’s fresh, seasonal and full of flavour,” said Jamie Gannon, Group Culinary Director. “From our dry-aged beef program to fresh produce from our working garden, every dish is designed to bring people together and celebrate great food in a beautiful setting.”
Building A New Destination For Wollondilly

Finally, stage one of the project launches in April, focusing on the essential food and social spaces. Down the track, Feros Group plans to expand The Wilton with boutique accommodation, conferencing and wedding facilities—a move that could firmly establish it as Wollondilly’s premier events destination.
