There are not many bars where you will be able to get a drink higher up than Bar 83.
And there’s certainly no other bar in Sydney with views that just might make you clutch your cocktail a little tighter than usual. At least, that’s what I’m feeling at 300 metres above the ground, window or no window. Anyway, there’s still some time to get a hold of my fear—breathe.
As part of the Trippas White Group’s $12m refit of Sydney Tower and its new three-level bar and restaurant venture, Bar 83 will join Infinity, the new high-dining restaurant replacing the outdated 360 Bar and Dining, and SkyFeast, the rebranded buffet on level two, to offer Sydneysiders an off-the-scale experience in the Golden Bucket. And also become the highest bar in Australia.
Infinity will be headed up by Mike Dierlinger of Bridge Room fame and will focus on modern-Australian cuisine with an international twist. In other words, think local produce done differently. And with the experience and techniques Dierlinger has picked up on his travels around the world and his time working in Michelin-star and hatted restaurants throughout Europe, south-east Asia and Australia, we’re pretty confident that the ever-evolving menu at Infinity will combine the best of Australia with the best international ingredients and flavours.
We’re also really stoked to hear that Dierlinger will also help guide the menu creation for Bar 83, so those sipping on cocktails in the luxury lounge can also feast not just on 360-degree views but also spectacular food. Rounding out the three-level venture will be the updated and modernised buffet on level two, featuring unlimited dining options as well as cuisines from around the world.
